Diploma in Hospitality & Tourism Management – 2 year 3 months
The programme is designed to provide a comprehensive education for students who are keen in developing the skills and knowledge needed in the hospitality and tourism industry. The programme focuses on skill-based training and exposes the students to the necessary knowledge in management and entrepreneurship which are essential for entry into the employment market. The course of study covers the areas of Food Hygiene & Sanitation; Introduction to Hospitality Industry; Fundamentals of Food; Basic Cookery; F&B Management; Purchasing; Housekeeping Management; Cost Control and Hotel Facilities Design. In addition, students will also be taught subjects such as Management; Accounting; Marketing; Human Resource; Law; Facilities and Psychology which will enable them to have an in-depth understanding of the industry.
The academic year comprises 6 semesters of study on-campus and one term of internship off-campus at the various establishments. Upon completion of the course, students have an option to pursue the Bachelor of Science in Hospitality Management from local (Malaysia) universities offering Hospitality Programmes or gain credit transfers to the various universities such as the Thames Valley University, United Kingdom, Birmingham University College , United Kingdom , Wellington Institute of Technology, New Zealand and CHN University of Netherland and HTMi of Switzerland .
Diploma in Culinary Arts – 2 years 3 months
The course is designed to provide a strong foundation for students who aspire to be chefs. It provides a foundation for culinary skills. Additionally, the programme aims to develop pride in craftsmanship and provide students with the necessary supervisory and technical skills which are essential in the field of culinary arts. The course of study covers the areas of European Cuisine; Asian Cuisine; Theme Events; Food & Culture; Food Arts and Nutrition. Besides culinary subjects, the course also focuses on subjects such as Management; Accounting; Marketing; Human Resource; Facilities and Entrepreneurship which will enable students to have further in-depth understanding of the industry. Short Courses
There are various short hospitality courses offered at Legend International College of Hospitality & Tourism.
· Cake Decorating
The course is very much hands-on training, specially designed for those who are keen in cake decorating and the course is properly guided by our experienced chefs. Students will learn how to use the pastille or royal icing in creating roses, orchids, tiers and a lot more.
· Baking
Students will learn the basic step-by-step guide on how to prepare pastries such as apple pie, cheesecake, cookies, snacks, bread and others. Students will also be given the opportunity to create their own menu.
· Food Handler’s Course
The course is designed for those who are in the food business whereby the person is required to handle, prepare and store food. The course covers various aspects of food poisoning, contamination, personal hygiene, Food Acts and Laws. The course covers mandatory training required by the Ministry of Health.
